I like it sliced lengthwise, and used in place of lasagne noodles, although shredded and made into patties or croquettes is a nice change of pace.

I saute onions until somewhat caramelized, add sliced zucchini and summer squash, some canned tomatoes, herbs and let simmer until cooked.
