    I got sick and couldn't make it yet.  But this Apple Cake from Gooseberry Patch sounds great. 4 eggs2 cups sugar1 cup vegetable oil1 teaspoon salt1 teaspoon vanilla1 teaspoon cinnamon1/2 teaspoon nutmeg1 teaspoon baking soda3 cup all purpose flour3 cups apples, cored, peeled and sliced. Mix the all the ingredients except the apples and blend well.  Fold in the apples and pour into 2 loaf pans prepared with nonstick spray and parchment paper in the bottom.  Bake for 1 1/2 hours at 350 degrees.
