Well, I play accordion in a Cajun band so I love Louisiana food the best!  Gumbo, jambalaya, King Cakes every Mardi Gras.

I love a lot of Southern cooking.  Something I had not had before the last year or two is plantain.  What an interesting food!  Every way I have cooked it has turned out results that were better than I expected.  What a surprise! Jim
