kale is the new spinach!   Kale chips are pretty good, for "just kale" eating.  I must admit I'm not huge on the natural flavor of kale, though.  I usually blanch it and then blend it up, in an attempt to hide it.  Adding it into sauces and soups that my family likes works and they don't have a clue they're eating kale.   I'm more of a swiss chard, broccoli rabe, bok choy, and (my favorite) spinach and broccoli kinda girl.

I love the baked kale chips my husband makes!  (Even if it doesn't quite fit into my ethnic cooking nights :-)
